La Petite Maison's Cocktail – How to Make It

WHere is a simplified take on a cocktail from the seasonal menu. This is a batch premix that is bursting full of essence associated with holiday season, which makes it excellent for a holiday party. Reserve the remaining citrus syrup for brunch beverages, sweets, or to make more rounds of this cocktail.

The Bikini Cocktail

Yields 10 servings

For the Clementine Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

For the Cocktail (makes 850ml, serving 10)

400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (see above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch

Directions

For the Cordial: Put all the ingredients in a pan, bring to a light boil, mixing until the sugar dissolves. Then, turn off the heat allowing it to reach room temperature entirely. Pour to a sterilised bottle, cap it and store in the refrigerator, where it will keep for around one month.

Preparing the Cocktail Base: Combine all the liquids into one sizeable container, leave to sit for 60 minutes, then pass it through , ideally through muslin, making it completely strained.

For serving: Measure 85ml from the premix to a stirring glass filled with ice, and stir carefully for about 60 seconds to chill. Filter to a chilled martini glass or a similar vessel, top with some cranberries and finish using a light spray of mandarin oil over the drink.
